French Sausage Toast

Ingredients:  2 pieces of bread, 1 egg, Breakfast Sausage patties (Cooked & crumbled).  Butter, Powdered Sugar, Pancake Syrup

Heat Pie iron, melt butter on both sides (so the bread doesn't stick) Dip bread in beaten egg, place on iron, add crumbled sausage, bread again.  Cook in campfire.  Once cooked add powdered sugar or dip in maple syrup.  YUM!
Take two slices of bread and butter them on 1 side. Place them in the sandwich pie maker buttered side out. Put 1 heaping Tablespoon of pizza sauce onto 1 side then put a heaping tablespoon of mozzarella cheese on top of sauce. Leave it plain or top it with pepperoni, green pepper, onion etc. Bake in campfire for approx. 2-3 minutes

Place slice of lightly buttered bread on one side butter side down. Spread one tbsp Pizza sauce on bread top with favorite pizza toppings: Pepperoni, olives, mushrooms, etc. sprinkle with Mozzarella cheese. Place second slice of bread on top buttered side up. cook until golden brown.

Prepare 2 slices of bread (butter them or I use butter flavor non stick spray--works like a dream). Spread layer of pizza sauce on EACH inside of bread. Fill with cooked, sliced chicken breast (1/4 inch thick (you can bake chicken in your pie iron or heavy duty foil works well). Sprinkle parmesan cheese and mozzarella cheese over chicken. Add garlic salt to taste. Cover with remaining piece of bread. Toast until golden brown.
For an extra garlic flavor, make garlic bread out of your toast by sprinkling garlic salt over buttered bread before placing in pie iron.

You will need approximately 1/4 cup of ground beef for each pie.  Crumble beef (you may add sliced onions if you like) and cook just until no longer pink.  Butter both sides of the iron, and place bread in the iron.  Put about 1/4 cup of mixture on the bread slice, add cooked bacon if you want, and top with a slice of cheese.  Close iron, and cook over fire checking occasionally to see if it is a nice golden brown.  Yum!!!

Butter two slices of whole wheat bread and place buttered side out in the iron. Place jalapeno slices (canned or jarred) on the dry side of one slice then top with shredded cheddar cheese, tomato slice and onion slice. Close it up and pop it in the fire for about 8 - 10 minutes, turning occasionally. For a little extra heat sprinkle on some Chile powder before you close it up.

Butter 2 slices of bread.  Place one slice butter side down on the iron.  Put 1 to 3 tablespoons of Dinty Moore's Beef stew and a little pepper on the first slice.  A slice or small(1/2") cubes of a tangy cheese (like cheddar) top the stew, then cover with the second slice of bread, close iron, trim crusts and place in campfire coals until as brown as you like.
This comes pretty close to a traditional coal miner's lunch in Cornwall, UK.

Oil or butter the pie iron on both inner sides.  Place a half of a 9 or 10" soft tortilla on one side.  Soon about 2 or 3 tablespoons of canned refried beans (any style) in the middle of the half tortilla.  Top the beans with a tablespoon of shredded cheddar.  Sprinkle with taco seasoning or chili powder.  Fold over the overhanging edges of the tortilla.  Trim overlapping edge and use to cover the beans not covered by the curved opening.  Close and clamp iron and place in the coals, cooking only a few minutes until the filling starts to bubble a bit.

Serve dipped in salsa.  This is a little messy, but very fast and delicious.

Butter 2 slices of bread. Place one piece buttered side down in pie iron. Place slice deli-turkey breast, slice of Swiss cheese and tablespoon of Thousand Island Dressing on bread. Cover with other piece of butter bread. Close and latch cooker. Cook over hot coals until both sides are golden brown.

Spray iron with Cooking Spray and heat in hot embers.
While iron is preheating prepare sandwiches by buttering (or spraying - which I find much easier) outside of bread.  Place two heaping tablespoons of canned beef stew (add teaspoon of favorite cheese if desired) between slices of bread. Place in pie iron and heat until golden brown on both sides.  Time varies depending upon heat of fire.

Butter two slices of your favorite bread and place butter side down, one on each side of pie iron.  Place on one side slices of turkey breast, ham, and swiss cheese. Close iron and clamp; place in the coals, cooking until the filling starts to bubble is heated through and the cheese has melted.

I make brownies ahead of time and put it in a container to go in cooler. Make them a little fudgy.
You can use a box mix. Spray the pie iron on both sides with non-stick cooking spray.  Lay the iron flat on a rock and fill almost halfway with the batter.  Lay gently on the embers as flat as possible (not where it is the hottest).  In about 5 minutes, you can pull it away from the fire and see if it is starting to set up.  If so, flip it to the other side and do the same with that side.  If it starts to steam too much, it is burning, so be careful.  What is nice about this recipe is that if it doesn't get done all the way, who cares?  Who doesn't like to like the batter bowl?  You can also add nuts, choc chips, mint chips, m & m's, etc.  It is hard to do this when it is too dark because you can't tell if you are burning the brownies, be careful!  Our campsite is the most popular because of these brownies!

Ingredients:

  • butter
  • garlic powder
  • left-over spaghetti
  • parmesan cheese
  • Heat pie-iron, melt butter on each side, sprinkle with garlic powder. Place 1 slice of bread on each side of iron. Add 2 TBS spaghetti, sprinkle with cheese. Close pie-iron, cook until golden brown. This is a favorite of my kids YUM-YUM !!!

Grease pie irons.  Fill an 8 to 10" tortilla shell with blueberry pie filling and cream cheese.  Cook over fire until filling is bubbly and wrap is browned.  Top with icing sugar.

This one is a great hit and any canned berries fruit filling berries can be used. Butter both sides of your iron put your bread on the bottom add 1/4 cup of berries and top with the second slice of bread cook till golden. Be careful filling will be hot.

Butter or spray with butter flavored spray two pieces of bread. Place butter side down in pie iron.  Crack whole egg onto bread and salt and pepper to taste.  Crumbled sausage, bacon, ham, etc. can be sprinkled on top.  Carefully place the second slice of bread on top and close pie iron.  Cook over coals until desired doneness.  I would recommend a minimum of 3 minutes on each side.

Use 2 refrigerated biscuits (usually comes in 8 - 10 per can).  Flatten biscuit out.  Use butter flavored cooking spray and spray the irons.  Put a biscuit on each side.  On the inside spread some caramel sauce, sprinkle some small pieces of pecans and a handful of chocolate chips.  Cook until biscuit is browned.

Spray one side of two slices of "English Muffin Toasting Loaf" bread with cooking spray (like Pam), place in pie iron. Add 1/4c. shredded sharp cheddar, 1 T. crumbled gorgonzola, 1 thin slice of Fontina cheese, and 1 T. shredded parmesan (not the powdered stuff from a can).  Top with bits of sundried tomatoes (either oil packed (drained) or rehydrated dry).  Spread dijon or brown mustard on the open piece of bread, then close the sandwich and the pie iron. Heat until bread is nicely toasted and all cheeses are melted together.
